Ingredient -
- 1 1/2 Pounds tart green apples
- cored, peeled and sliced
- 1/4 Cup golden raisins plumped in 1/4 cup dark rumfor at least 30 minutes

Speedway Cake Idea
Use a bundt cake pan or an oven proof ring mold pan. You will need to make two cakes or buy two bundt cakes at the store.
Cut a section according to the pattern to the far left and place cakes on a platter or cardboard wrapped with foil like the figure eight pattern. Frost cakes with chocolate frosting. This is a 3 layer cake. The bottom and middle layers were first frosted with Wilton's white butter cream frosting and then covered with Wilton's ready-made fondant tinted a royal blue. The blue was kneaded in partially, leaving a swirled effect - in order to resemble a sea or ocean. The top layer was frosted in beige butter cream and was meant to look like an island. She used brown sugar and cinnamon sugar for the sand, and green tinted coconut for the grass. The palm trees were part of Top's party set for Jurassic park and the oranatang sitting underneath the trees was part of a Pet Shoppe set.

Blend some drops of liquid food color with 1 Spoon water and scatter over 1 cup coconut in a plastic bag. Shake up and down until color is well distributed.

Heat oven to 350 F. Cover over the Baker's Angel Flake coconut in an even layer having a little depth baking pan. Toast 7 to 12 minutes or until lightly dark or browned or dusty colour.

-1/2 cup butter at room temperature
-1/4 cup sugar
-1/4 tsp. vanilla extract
-1 cup all-purpose flour
-3 to 4 tbs honey-crunch wheat germ

In a large bowl with electric mixer on medium, beat cream cheese and butter until smooth, about 1 minute. Beat in sugar and vanilla. Mix in flour on low speed just until blended.
