Banana Cake

Ingredient -

- 2 cups Unsifted flour -- (1/2 stick) + 1 t to dust pan
- 2 teaspoons Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1/4 cup applesauce
- 1 cup Sugar
- 1 lg Egg
- 1 lg Egg white
- 2 teaspoons lemon zest
- 1 teaspoon Vanilla extract
- 1 pound bananas -- ripe, mashed
- 3/4 cup Buttermilk -- skim
- 1 teaspoon Powdered sugar -- (for dusting)

Preparation Method

Preheat oven to 350F. With cooking spray, grease 13 x 9" baking pan; dust with flour. In medium bowl, combine 2 cups flour, baking powder, baking soda and salt;mix well. In large bowl of elrctric mixer, at high speed, beat margarine and sugar until fluffy. At medium sprrd, beat in egg, egg white, lemon zest and vanilla; beat 2 minutes. Beat in bananas. At low speed, beat in flour mixture (in fourths) alternately with buttermilk (in thirds), beginning and ending with flour. Pour into prepared pan. Bake 30 minutes or until done. Cool cake in pan 10 minutes; run knife along sides and invert onto rack. Cool. Dust with powdered sugar.
