HAZELNUT FRANGELICO CHEESECAKE

~~~~~~~Ingredients~~~~~~~

Crust:
  • 1 cup : flour
  • 2 tablespoons : sugar
  • ½ teaspoon: baking powder
  • ¼ teaspoon: salt
  • 1/3 cup: butter, soft
  • 2 tablespoons: milk
Filling:
  • 1½ pounds: cream cheese, softened
  • 1½ cups :sugar
  • 2 tablespoons :flour
  • 1 tablespoon: hazelnuts, chopped
  • ¼ teaspoon : vanilla
  • 4 : eggs
  • ¼ teaspoon : Frangelico liqueur

BLACK FOREST CHEESECAKE

Crust:
  • 1 ¼ cup: graham wafer crumbs
  • ¼ cup: sugar
  • ½ cup:butter, melted
Filling:
  • 1½ pounds: cream cheese, softened
  • 1-12 ounce can : condensed milk
  • 8 ounces: semi-sweet chocolate, melted, cooled
  • 4 : eggs

Chocolate Raspberry Cheesecake


It had always been quite popular. For plain Chocolate, just omit the berries and the liqueur.

Chocolate Raspberry Cheesecake

Crust:

1 1/4 cups chocolate cookie crumbs (like Oreo or chocolate wafers) 1/4 cup butter, melted

Blend well together and press into the bottom of an 11 inch springform pan. Bake at 350 for 5 minutes. Let cool.

Very Berry Cheesecake

Ingredients
  • 40 vanilla wafers
  • 6 tablespoons butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup white sugar
  • 2 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 cup cottage cheese, creamed
  • 1/4 cup cherry brandy
  • 3 eggs
  • 3 1/2 cups fresh blackberries
  • 1 tablespoon cherry brandy
  • 1 tablespoon white sugar

Autumn Cheesecake

Ingredients
  • 1 cup graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 3 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 4 cups thinly sliced apples
  • 1/3 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped pecans

Light Chocolate Icing

Ingredient -
  • 2/3 cup soft butter
  • 2 lb. confectioner's sugar
  • 2 oz. unsweetened chocolate melted and cooled
  • 2 egg yolks
  • 1 tbs. vanilla
  • About 1/2 cup whipping cream
Preparation Method

In a large mixing bowl, cream butter gradually; blend in 1 pound confectioner's sugar. Stir in melted chocolate, egg yolks and vanilla. Gradually beat in remaining 1 pound confectioner's sugar. Add enough whipping cream to bring to spreading consistency.
