Amaretto cheesecake

Ingredients

Crust:
  • 1 cup : wafer crumbs
  • ½ cup : toasted ground almonds
  • 2 tablespoons : sugar
  • ¼ cup : butter, melted
Filling:
  • 2 pounds : cream cheese, softened
  • 1 cup : sugar
  • 3 tablespoons : flour
  • 4 : eggs
  • 1 cup : sour cream
  • ¼ cup : Amaretto liqueur
Glaze:
  • ½ cup : apricot jam
  • 1 tablespoon : Amaretto liqueur
  • 36 : whole almonds, unblanched
  • 3 ounces : semi sweet chocolate, melted
Directions :
Preheat oven to 450 degrees.
Crust:
Combine the crust ingredients. Press onto bottom of a greased 9-inch spring form pan. Set aside.
Filling:
In the bowl of an electric mixer, combine and beat cream cheese, sugar and flour, mixing until well blended. Add eggs, one at the time, mixing until combined. Blend in sour cream and liqueur; pour over crust. Bake at 450 degrees for 10 minutes. Reduce oven to 250 degrees. Continue baking for 1 hour. Run knife around rim of pan. Chill.
Glaze:
Melt jam. Add liqueur. Strain mixture and pour over cake. Garnish with chocolate dipped almonds.
