Banana Coconut Cake

 Ingredients

- 1 1/2 cups Whole Wheat flour
- 1 cup Unbleached flour
- 2 teaspoons Baking soda
- 1 cup Unsweetened coconut
- 1 cup Walnuts; chopped -- optional
- 2 Eggs
- 2/3 cup Butter
- 2/3 cup Honey
- 4 ounces Cream cheese (1/2 cup)
- 1/2 cup Instant milk

- 1 teaspoon Vanilla
- 8 ounces Very fresh tofu
- 3 Bananas; very ripe -- mashed Well

Directions
  • Mix well in a large bowl the flour, soda, coconut and walnuts.
  • Mix eggs, butter, honey, cream cheese, instant nonfat milk,vanilla and tofu in blender until smooth. Use spatula to keep mixture in blades if necessary.
  • Pour blended ingredients into the flour mixture.
  • Add bananas; mix well.
  • Turn into a floured 10" buttered and floured springform pan
  • Bake at 350 for 45 minutes.
