Apple Cake Deluxe

Ingredient -

- 1 1/2 cups Oil
- 2 cups Sugar
- 2 Eggs
- 3 cups All purpose flour
- 1 cup Nuts; chopped, or more -- if desired
- 1 teaspoon Soda
- 1 teaspoon Salt
- 1 teaspoon Cinnamon; or more -- if desired
- 3 cups Apples; peeled -- finely chopped
- 1 teaspoon Vanilla -- if desired

Apple Batter Cake

Ingredient -

- 1 1/2 Pounds tart green apples
- cored, peeled and sliced
- 1/4 Cup golden raisins plumped in 1/4 cup dark rumfor at least 30 minutes
- 2 Tablespoons melted sweet butter
- 1 Teaspoon cinnamon
- 1/4 Cup softened sweet butter -- (1/2 stick)
- 3/4 Cup plus 2 tablespoons sugar
- 2 Large eggs -- separated
- 1 Cup flour
- 1 Teaspoon baking powder
